Baked Cheesy Turkey Sausage Vegan Spaghetti – Best Traditional Italian Diet Recipe

  1. Preheat the oven to 350 degrees F.
  2. Cook pasta according to package instructions, but keep them a little harder than normal, for future bake. Drain and set aside.
  3. Cook the sausage until browned, crumbled and cooked through. Remove all excess grease and set aside in a medium bowl . Stir in the sauce. Set aside.
  4. Heat the olive oil over medium heat in a large saute pan, until shimmering. Add the onion, mushrooms, garlic, and bell pepper and sautΓ© until tender.
  5. Add the sautΓ©ed vegetables along with the chopped spinach and/or swiss chard, carrot, and Italian seasoning to the pasta bowl. Mix to combine and evenly distribute the vegetables. Season to taste with salt and pepper, if desired.
  6. In a 9×13 or other oven safe large casserole dish, layer half of the pasta mixture, half of the sauce, 1 cup mozzarella. Then repeat 2nd layer with remaining pasta, sauce, and mozzarella.
  7. Cover and bake in a 350 degree for 20 minutes. Uncover and bake until cheese is melted and lightly browned on top. Serve.
