  • 1 large head of romaine lettuce, cut torn leaves into half or quarter
  • 2 large brown Chinese pears, cored, segmented then sliced thinly
  • 1 large green pear, cored, segmented then sliced thinly
  • 1 cup cherry tomatoes, halved (I mixed red and yellow)
  • 1 small bunch of fresh watercress, picked
  • ¼ cup extra virgin olive oil
  • 1½ tablespoons grainy mustard
  • sea salt and pepper to taste
