White Chocolate Snowflake Cupcake – Happy Christmas & New Year Party Recipe

 

  1. Preheat the oven to 180 degrees C /350 F/ gas 4. Place paper bun cases in a muffin tray.
  2. Cream 160g butter and caster sugar until pale.
  3. Whisk eggs and 1 teaspoon vanilla extract in a separate bowl and gradually add to the sugar and butter mixture.
  4. Carefully fold the flour into the cake mixture, then add the milk.
  5. Place mix in the cases. Bake for 15 to 20 minutes, or until golden brown and the cake springs bake when touched.

For the chocolate snowflake

  1. Line bake sheet with parchement paper. Place melted chocolate in a pastry bag fitted with a number two round tip or place melted chocolate in a plastic bag and cut a small hole in a corner and pipe chocolate into snowflake shape. Sprinkle with edible silver ball. Chill piped chocolate stars in the refrigerator until ready to use. (If you are nervous about free-handing the stars, place a sheet with a snowflake pattern underneath the parchment paper and pipe chocolate over the outline).

For the icing:

  1. Beat 110g butter in a bowl. Add a little of icing sugar at a time until smooth and creamy. Add milk and whisk. Add a few drops vanilla extract and whisk again.
    Spread frosting on cupcakes when they are cool to touch. Decor with chocolate snowflake & serve!
